A quick and easy delicious vegetarian curry which will wow your taste buds.

Ingredients
1 Onion
4 Garlic cloves
Thumb size Ginger
3 tbsp red curry paste
1 Large sweet potato
1-2 Large carrots
1 Can coconut milk
1 Bag spinach
1 Lime
Handful of peanuts
Salt and pepper to taste
Preparation
Utensil: 5Qt Roaster
Preheat your roaster for 7 minutes, then add onion, garlic, ginger red curry paste, sweet potatoes, carrots, coconut milk and water. Cook for 12 minutes
Add lime juice, salt and pepper and spinach, mix and cook for 2 minutes.
Turn the heat off and leave for 2 minutes.
Sprinkle with nuts and serve
Tip: for a creamier taste, add 2 tbsp of peanut butter and serve with rice.
