A classic Ghanaian dish filled with flavour that just seem to work well together! We recommend you try this at least once... or twice!

Ingredients
For Stew:
Tumeric
Paprika
1 Onion
1 Bell pepper
1 Long sweet pepper
3 Tomatoes
1 Scotch bonnet
3 Garlic cloves
1 ginger (thumb)
Dried basil
The rest:
Melon seeds
3 eggs
Cabbage
Spinach
Carrots
Mackerel
Spinach
Bay leaves
Preparation
Utensil: 5Qt Wok
Blend all of the stew ingredients
On a cold wok, cook the stew ingredients for 15 minutes on medium heat.
On a separate bowl, blend the melon seeds. Once blended, add three beaten eggs and a little of water and mix to create a paste.
Add to the stew along with the mackerel, sliced carrot and cabbage and cook for another 10 minutes and turn the heat off.
Add the spinach and bay leaves and mix. Put the cover on for another 5 minutes.
Serve.
