This tomato based rice dish is perfect for those looking for something flavourful, filling with a kick. Explore a bit of West Africa for dinner!

Ingredients
1 Onion
1 Bell pepper
2 Long sweet pepper
3 Tomatoes
2 Scotch bonnets
70g Tomato puree
Jollof Seasoning
Dried thyme
Curry powder
Bouillon
2 cups of basmati rice
Preparation
Utensil: Electric Skillet
Pre-heat Electric Skillet for 7 minutes on 230.
Blend onion, bell pepper, sweet pepper, tomatoes, scotch bonnet, tomato puree, jollof seasoning, dried thyme, curry powder and bouillon.
Once the Electric Skillet is pre-heated, pour in the blended mixture and cook on 230 for 5 minutes.
Add the rice into the Electric skillet, mix so it's evenly coated with the tomato stew and set on RIC 2.
Once the Electric Skillet goes on 65, mix the rice once more and serve.
